We cook simple meals during the week since we're too tired to cook. Black bean tostadas are ready in 30 minutes with 5 ingredients.
– 2 (15-oz.) cans black beans, rinsed and drained – 8 tostada – 2 c. shredded pepper jack – Avocado, sliced – Hot sauce
350° oven. Beans and 1 cup water over medium heat. Warm beans in a 10-minute simmer. Smash most beans, leaving some whole. Water smooths it.
Meanwhile, place tostadas on a large baking sheet and sprinkle cheese evenly over each. Bake until cheese is melty, about 5 minutes.
Top tostadas with beans, avocado slices, and hot sauce.
